High Energy Snacks for Skiing and Hiking
Lisa’s Orange and Carrot Sunshine Bars
It can be hard to replicate the satisfaction you get from reaching the top of a skin track and unpacking a home baked energy bar to snack on. Especially when the sumptuous treat has been baked by Whitecap’s head cook, Lisa Graham-Knight. But, this particular Whitecap recipe is so easy, that it’s worth trying at home. Follow the instructions below to create your own Sunshine bars for your next mountain adventure.
Preheat oven to 350F
Ingredients
Bars
- ½ cup butter
- ¾ cup white sugar
- ¼ cup light brown sugar
- ¼ cup olive oil
- 1 egg
- 2 tsp vanilla
- 1 ½ cups flour
- 1 ½ tsp salt
- ½ tsp baking powder
- 1 cup of finely grated carrots
- Zest of 2 oranges
Orange Drizzle
- 2 oz cream cheese
- ½ cup confectioners sugar
- 1 tablespoon of orange juice
- Zest of 1 orange
Instructions
- In a bowl cream butter and the brown and white sugars
- Add egg and vanilla
- Add oil and mix until smooth
- Sift and add flour, salt, cinnamon and baking powder, mixing until just combined
- Add carrots, pumpkin seeds and orange zest and mix until combined
- Transfer batter to 8×8” pan and spread evenly
- Bake 350F for 30 minutes until golden brown.
- Remove from the oven and cool completely
Orange drizzle
- In a bowl, mix cream cheese, a pinch of salt, and confectioners sugar until smooth. Stir in OJ and zest until combined. Drizzle on cooled bars!
